PSALTRY CASSAVA FLOUR MUFFIN RECIPE

Ingredients
150 grams of sugar
113 grams of Butter
2 Eggs
2 tsp Vanilla Flavor
213 grams Psaltry Organic Cassava flour
2 tsp Baking Powder
½ tsp Salt
240ml Milk
Method of Preparation
- Preheat oven to 120 °C
- In a bowl cream together the butter and sugar until the sugar has dissolved and the mixture is pale yellow and fluffy.
- Add the vanilla to the butter and sugar mixture and mix well
- Add the eggs into the butter and sugar mixture one at a time, mixing for one minute after each addition.
- Sift together the Psaltry Cassava Flour, baking powder, and salt.
- Divide the dry mixture into two portions and add the first half into the batter, mixing gently.
- Pour 240ml milk into the batter and gently mix again to incorporate.
- Once that is well incorporated, fold in the other half of the dry mixture.
- Line the muffins pan with cupcake liners, and scoop the batter into each cupcake liner.
- Bake for 20 minutes at 120°C or until a toothpick inserted into the center comes out clean.
