PSALTRY CASSAVA FLOUR BANANA BREAD

Ingredients:
4 Mashed Bananas
3 Eggs
½ cup Sugar
¼ cup Canola/Vegetable oil
½ tsp Vanilla Flavor
1 ½ cup Psaltry Organic Cassava Flour
¾ cup Psaltry Organic Cassava Starch
½ tsp Baking Powder
½ tsp Baking Soda
½ tsp Cinnamon
A pinch of Salt
Method of Preparation
- Preheat oven to 180 degrees Celcius, and grease your baking dish with butter.
- Mash the bananas in a bowl or blend in a blender.
- In a separate bowl cream together the butter and sugar until the sugar has dissolved and the mixture is a pale yellow color.
- Whisk in the eggs, vanilla, oil, and mashed bananas until well combined
- In another bowl, sift together the cassava flour, salt, cinnamon, baking powder, baking soda, and cassava starch
- Pour half of the wet ingredient mixture into the dry and gently combine. Fold in the remaining half being careful not to overmix.
- Pour batter into a lined pan and bake for 30 – 40 minutes at 180°C
- Insert a toothpick into the center, once it comes out clean, your banana bread is ready!
- Allow the banana bread to cool for 10-15 minutes before slicing and serving
