Ingredients

½ Psaltry Cassava Flour 

½ cup Psaltry Cassava Starch 

100g Sugar 

2 tsp Baking powder 

½ tsp Salt 

2 Eggs 

1 cup Buttermilk 

1tbsp Lemon Zest 

1tbsp Lemon juice 

½ cup Veg oil 

For the icing

1 tbsp lemon juice

150g icing sugar

Method of Preparation

  1. Preheat the oven to 180 °C and grease a rectangular baking dish with margarine.
  2. In a bowl combine all the dry ingredients together.
  3. Then add the buttermilk, lemon zest, lemon juice, veg oil, eggs and whisk together.
  4. Pour into a greased rectangular pan.
  5. Bake for 25 – 30 minutes at 180 °C until a toothpick inserted into the middle of the cake comes out clean.
  6. For the icing, mix together the icing sugar and lemon juice. Spread on the cake while it is still warm.
