PSALTRY CASSAVA STARCH LEMON CAKE

Ingredients
½ Psaltry Cassava Flour
½ cup Psaltry Cassava Starch
100g Sugar
2 tsp Baking powder
½ tsp Salt
2 Eggs
1 cup Buttermilk
1tbsp Lemon Zest
1tbsp Lemon juice
½ cup Veg oil
For the icing
1 tbsp lemon juice
150g icing sugar
Method of Preparation
- Preheat the oven to 180 °C and grease a rectangular baking dish with margarine.
- In a bowl combine all the dry ingredients together.
- Then add the buttermilk, lemon zest, lemon juice, veg oil, eggs and whisk together.
- Pour into a greased rectangular pan.
- Bake for 25 – 30 minutes at 180 °C until a toothpick inserted into the middle of the cake comes out clean.
- For the icing, mix together the icing sugar and lemon juice. Spread on the cake while it is still warm.
