PSALTRY CASSAVA FLOUR MUFFIN RECIPE

Ingredients

150 grams of sugar

113 grams of Butter

2 Eggs

2 tsp Vanilla Flavor

213 grams Psaltry Organic Cassava flour

2 tsp Baking Powder

½ tsp Salt

240ml Milk

Method of Preparation

  1. Preheat oven to 120 °C 
  2. In a bowl cream together the butter and sugar until the sugar has dissolved and the mixture is pale yellow and fluffy.
  3. Add the vanilla to the butter and sugar mixture and mix well
  4. Add the eggs into the butter and sugar mixture one at a time, mixing for one minute after each addition.
  5. Sift together the Psaltry Cassava Flour, baking powder, and salt.
  6. Divide the dry mixture into two portions and add the first half into the batter, mixing gently.
  7. Pour 240ml milk into the batter and gently mix again to incorporate. 
  8. Once that is well incorporated, fold in the other half of the dry mixture.
  9. Line the muffins pan with cupcake liners, and scoop the batter into each cupcake liner.
  10. Bake for 20 minutes at 120°C or until a toothpick inserted into the center comes out clean.
