PSALTRY CASSAVA STARCH COOKIES

Ingredients

113g Margarine or Butter 

100g Brown Sugar 

2 Eggs (beaten) 

1tsp Vanilla flavor 

180g Psaltry Cassava Flour 

60g Psaltry Cassava starch 

1tsp Baking soda 

½ tsp Salt 

Method of Preparation

  1. Preheat oven to 170 °C and line a baking sheet with parchment paper
  2. In a bowl, cream the sugar and butter together till pale and fluffy.
  3. Add in the beaten eggs and vanilla flavor and whisk to combine
  4. Add the Psaltry Cassava Flour and Psaltry Cassava Starch, baking soda, and salt.
  5. Mix all together till well combined.
  6. Cover and refrigerate for 30 minutes.
  7. Scoop into a lined baking tray and bake for 13 to 15 min at 170 °C
  8. Allow the cookies to cool for 20 minutes before removing them from the baking sheet
