PSALTRY CASSAVA STARCH COOKIES

Ingredients
113g Margarine or Butter
100g Brown Sugar
2 Eggs (beaten)
1tsp Vanilla flavor
180g Psaltry Cassava Flour
60g Psaltry Cassava starch
1tsp Baking soda
½ tsp Salt
Method of Preparation
- Preheat oven to 170 °C and line a baking sheet with parchment paper
- In a bowl, cream the sugar and butter together till pale and fluffy.
- Add in the beaten eggs and vanilla flavor and whisk to combine
- Add the Psaltry Cassava Flour and Psaltry Cassava Starch, baking soda, and salt.
- Mix all together till well combined.
- Cover and refrigerate for 30 minutes.
- Scoop into a lined baking tray and bake for 13 to 15 min at 170 °C
- Allow the cookies to cool for 20 minutes before removing them from the baking sheet
