PSALTRY CASSAVA FLOUR AND STARCH CHOCOLATE MUFFINS

Ingredients

1 cup Psaltry Cassava Flour 

½ cup Psaltry Cassava Starch 

100g Sugar

40g Cocoa powder 

1tsp Baking Soda 

½ tsp Salt 

¼ cup Veg oil 

½ cup Milk

1/3 cup prepared Coffee 

1 tsp Vinegar 

2tsp Vanilla Flavor 

 2 Eggs  

Method of Preparation

  1. Preheat an oven to 180°C and line a cupcake or muffin tray with cupcake or muffin liners.
  2. In a bowl, whisk together the Psaltry Cassava Flour, Psaltry Cassava Starch, cocoa powder, sugar, baking soda, and salt.
  3. Add the milk, coffee, veg. oil, vinegar, vanilla flavor, eggs.
  4. Whisk everytthing together till smooth.
  5. Scoop into a muffin liner.
  6. Bake for 15 – 20 min at 180 °C
  7. Allow the cupcakes to cool for 10 minutes before removing them from the muffin tray.
