PSALTRY CASSAVA FLOUR BANANA BREAD

Ingredients: 

4 Mashed Bananas

3 Eggs

½ cup Sugar

¼ cup Canola/Vegetable oil

½ tsp Vanilla Flavor

1 ½ cup Psaltry Organic Cassava Flour

¾ cup Psaltry Organic Cassava Starch

½ tsp Baking Powder

½ tsp Baking Soda

½ tsp Cinnamon

A pinch of Salt

Method of Preparation

  1. Preheat oven to 180 degrees Celcius, and grease your baking dish with butter.
  2. Mash the bananas in a bowl or blend in a blender.
  3. In a separate bowl cream together the butter and sugar until the sugar has dissolved and the mixture is a pale yellow color.
  4. Whisk in the eggs, vanilla, oil, and mashed bananas until well combined
  5. In another bowl, sift together the cassava flour, salt, cinnamon, baking powder, baking soda, and cassava starch
  6. Pour half of the wet ingredient mixture into the dry and gently combine. Fold in the remaining half being careful not to overmix.
  7. Pour batter into a lined pan and bake for 30 – 40 minutes at 180°C
  8. Insert a toothpick into the center, once it comes out clean, your banana bread is ready!
  9. Allow the banana bread to cool for 10-15 minutes before slicing and serving
